Carrot Cake
   Freddie Marler and Mom Serves 10-12
 
Ingredients:
  • 2 c. Plain flour
  • 2 c. Sugar
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1 tsp. vanilla
  • 1 1/2 c. vegetable oil
  • 4 eggs
  • 3 c. grated carrots
  • 1 c. chopped pecans

Put flour, sugar, baking soda, cinnamon, and salt in all at once. Add vanilla and oil and mix well. Add eggs and beat well. Fold in carrots and pecans and bake at 350 degrees for 25 minutes.

Icing

Ingredients
  • 1 8 oz. pkg cream cheese
  • 1 stick butter
  • 1 box confectioner's sugar
  • 1 tsp. vanilla
  • 1 c. pecans

Mix together until creamy. Spread in-between cake layers and cover cake with the rest.
