Pecan Pie
   Eileen Fitzpatrick Serves 10-12
 
Ingredients:
  • 3 eggs
  • 2/3 c. sugar
  • 1/2 tsp. salt
  • 1/3 c. butter/margarine melted
  • 1 c. Karo Corn Syrup (Prefer Lite, but can use dark)
  • 1 1/2 to 2 c. pecans (chopped) whole pecans make a drier pie
  • 1 premade pie crust (use 2" deep pie crust)

Beat eggs and sugar together well w/ fork or wisk. add salt to this, then add butter, add Karo Syrup, add pecans, pour all into pastry shell and bake at 350 degrees for 45 minutes to an hour. Stick w/ a sharp knife, and if knife comes out clean, pie is done. Be careful not to overcook. Put pie on cookie sheet in case it overflows
