Red Cabbage
   Marie Fitzpatrick (Based on a recipe from Alice Reckmann) Serves 6-8
 
Ingredients:


  • 1 head red cabbage (2.5 to 3 lbs)
  • 1/2 c. red wine vinegar
  • 1 large onion, chopped
  • 1/3 c. brown sugar
  • 4 T. bacon fat (or butter)
  • 2 tart apples, cored and sliced
  • 1.5 T. caraway seeds
  • Salt and pepper to taste

Core cabbage and remove outer leaves. Chop cabbage until it is coarse. In a skillet cook chopped oninos in bacon fat until they are tender. Add cabbage and season to taste, then cover and steam for 10 minutes. Add 4 T. of boiling water and steam apples. Cover and simmer on low for 1 hour. (Cabbage will become tender). Add sugar and vinegar and cook for another 15 minutes.
