Shrimp Scampi
   Alvin W. Fitzpatrick Serves 6 to 8
 
Ingredients:
  • 1 1/2 c. chopped onions (sm)
  • 2 lbs. shrimp
  • 1/2 c. olive oil
  • 3 to 5 garlic cloves (crushed)
  • 1 1/2 tsp. salt
  • 1/2 c. butter or oleo
  • 1/2 c. chopped parsley
  • 2 tbsp. lemon juice
  • 3/4 tsp. black pepper

Saute onion in about 1/2 of the butter until onion wilts. transfer onion and butter into lg. mixing bowl. add shrimp, olive oil, parsley, garlic, lemon juice., salt and pepper. Toss together well. Arrange shrimp in a 9 x 13 Pyrex baking dish. Pour remaining sauce over them. broil 3 to 5 minutes about 6 inches from the heat source (lower your rack). Then turn and then broil another 3 to 5 minutes.

Serve piping hot over spaghetti with French Bread.
